Puntarelle 300g
Salted anchovy fillets 12
Lemon 1
Garlic clove (if desired) 1/2
Extra virgin olive oil to taste
Salt to taste

This puntarelle salad with anchovies is a fresh dish with a strong and intense flavor, perfect as a tasty appetizer. Thanks to the freshness of the puntarelle and the salty note of the anchovies, this salad is a balanced and tasty dish that will satisfy even the most demanding palates.

PREPARATION

1 Remove the outer leaves of the puntarelle and cut them into thin strips. Wash, dry the puntarelle, and place them in a bowl.
2 Clean the anchovy fillets by removing the backbone, following the instructions on the back of the package.
3 Prepare the vinaigrette by mixing the juice of half a lemon with 2 tablespoons of extra-virgin olive oil and a pinch of salt. Add finely chopped garlic (if desired).
4 Distribute the anchovies on the puntarelle salad and season with the vinaigrette. Mix well and serve. Enjoy your meal!
