INGREDIENTS:

For 2 jacket potatoes:

Whole large potato 2
Smoked salmon 100g
Sour cream 50g
Fresh chives to taste
Salt and pepper to taste
Extra virgin olive oil to taste

The potato in foil with salmon and sour cream is a perfect dish for a rustic dinner. The potato, slowly cooked in foil, becomes soft and creamy and pairs perfectly with the delicate flavor of smoked salmon and the freshness of sour cream. A true delight for the palate!

PREPARATION

1 <ol><li>Preheat the oven to 200°C.
2 Thoroughly wash and dry the potato. With a fork, pierce the surface in several places and wrap it in a sheet of aluminum foil. Bake in the oven for about 45-50 minutes, or until it is soft to the touch.
3 Meanwhile, prepare the sour cream sauce. In a bowl, mix the sour cream with a pinch of salt and a grind of pepper. Finely chop the chives and add them to the sauce.
4 Once the potato is cooked, remove it from the oven and let it cool slightly. Gently open the aluminum foil and cut the potato in half, without completely separating the two parts. Season with a drizzle of oil, salt, and pepper.
5 Lay the slices of smoked salmon on the potato and add the sour cream and chives sauce. Enjoy your meal!</li></ol>
